GF Vegan Crepes
They say breakfast is the most important meal of the day…but if you ask me, breakfast treats are far more important! Selecting a breakfast treat that is both vegan and gluten-free is always challenging, and most GF options taste like cardboard (in my humble opinion). However, thankfully, I think I've nailed it with this one!
Oh, how I love thee!
I've been working with what culinary skills I have, for quite some time now, to create the perfect recipe for some beautiful, thin little French pancakes, and the process has finally paid off! Crepes can be tricky to make at home because most people don't actually have one of those beautiful crepe wheels to cook with in their own kitchens, so in real life, you have to get that "pan swirl" down just right. The key to mastering this skill is to moderate the heat and re-grease the pan in between each crepe.
Start by heating a non-stick pan with a ¼ tsp of vegan butter and make sure the pan is completely coated. Pour in your batter and swirl the pan around, off of the heat, until a thin layer of batter covers the entire bottom. Then, return the pan to the heat and cook until the moisture on top begins to absorb. When just a very small bit of moist batter remains present, give it a quick flip and cook the other side for just about 30-60 seconds. Repeat this process for each crepe and make sure to take the pan off of the heat each time to control the temperature.
Once you get the "swirl and flip" down, you will have perfect crepes every time! Now, personally, when I think of crepes, I think of a sweet breakfast treat, but you can also make these crepes savory by swapping the sugar and cinnamon for your favorite spices.
There are also endless topping options with these crepes! This time around, I added sweetened, shaved coconut and dark cacao baking nibs, which were delicious! But, these crepes would be just as delicious with some hazelnut spread and strawberries or maybe some blueberries and whipped coconut cream!

Now, I recommend you get in the kitchen and try your hand at these marvelous little creations and enjoy! I am certain you will be adding these treats to your Saturday morning breakfast rotation once you give them a whirl!
