GF Vegan Banana Pancakes

Saturday mornings are for pancakes, period! You've worked hard all week, you've kept up with your diet, your children are still breathing, you made it to work on time, and you've even managed to get a few work-outs in there! Now, it's the weekend! Wake up leisurely, stay in your PJ's, pour yourself a giant cup of coffee, and make yourself a delicious, decadent breakfast treat to jump-start this glorious day off!
These pancakes are super easy to make and they taste just like fresh banana nut bread! Top them off with warm maple syrup and crunchy walnuts or pecans (or both) and you'll have a "dessert-for-breakfast" situation on your hands! But, ya know what…you deserve it!
Treat Yo' Self!
If you're making these pancakes Gluten-Free, make sure you're using GF All-Purpose flour and not almond flour or something of the like. I've tried this recipe with other nut flours and they either don't hold up in the pan or they don't have that fluffy, cake-like texture of traditional pancakes. Pillsbury makes a great GF All-Purpose flour that is usually in the baking section of most major grocery stores in the US. If you can't find something in your local market, you can find it here .
If you're not GF, then regular All-Purpose flour will do. Before adding the flour, make sure to really mash the banana up well with a fork. Doing this in the almond milk, before adding the dry ingredients, will help infuse the banana flavor throughout the batter and prevent you from having regular, floury pancakes with banana chunks all throughout them.
Once you have the batter ready, place it in a pan on MEDIUM heat in 3-4 inch circles. Let each side cook for about 3-4 minutes, flip carefully, and then plate those suckers. After a few tries, you will master the flip (trust me) and you'll have amazing pancakes every time!
I topped mine off with some additional vegan butter before adding the nuts and syrup, which kept them incredibly moist, but that step is totally optional! Just go with your gut, do what feels right, and enjoy!
